Caramel Corn

Caramel Corn is by far one of our faves!  So addicting and so good!  This recipe comes from our good friend Cindie and we find ourselves making it quite often.  I have changed a few things.  I add two bags of mini marshmallows instead of one.  I like the extra yumminess and stickiness!  And its great that most ingredients are already in the pantry! Enjoy!

2 bags of mini marshmallows
2 cups brown sugar
1/4 cup corn syrup
1 cup butter
1 tsp vanilla
1/2 cup popcorn kernals

Over low heat combined butter, brown sugar, corn syrup, and vanilla.  Once that is all melted gradually add the two bags of marshmallows.  While the marshmallows are slowly melting pop your 1/2 cup of popcorn kernals in your popcorn popper.  Once all the marshmallows have melted in with your brown sugar, corn syrup, butter and vanilla pour immediately over popcorn and mix well.  Then begin eating!  Trust me you wont be able to just have a little.  You will find yourself eating more than you had planned on!
