Soft chocolate chip cookies

We have posted chocolate chip cookies before but there are so many different kinds! So here is another delicious chocolate chip cookie recipe that you all will enjoy!!! 

Soft Chocolate Chip Cookies

1 Cup butter, softened 
1/2 Cup sugar
11/2 Cup brown sugar
2 eggs
2 tsp vanilla
3 Cups flour
1 tsp salt
1 tsp baking soda
11/2 tsp baking powder
2 Cups chocolate chips 

1. Preheat oven to 350

2. Cream butter and sugars together.

3. Add all other ingredients, mix well.

4. Scoop 2 Tbsp sized scoops onto greased cookie sheet and bake for 10 minutes. 

Cheesy chicken quesadilla pie

Well I Joni am back visiting the other sweet of 2sweets and I am sure we will be making some delicious goods to share with you! We made this yummy pie for dinner and I am sure you will all love it too!! 

Cheesy Chicken Quesadilla Pie

3 cups cooked chicken
21/2 Cups cheddar cheese
1/2Cup cilantro
1 Can green chilies
1 small onion chopped
1 red pepper chopped
6 tortillas
11/2 Cups flour
3 eggs
11/4 Cup milk
Salt and pepper to taste

1. Preheat oven to 425

2. Combine chicken, 2 Cups cheese, cilantro, green chilies, onion, pepper, and salt and pepper to taste.

3. In two pie pans arrange 3 tortillas in each pan so all sides and bottom are covered. Pour half chicken mixture in one and half in the other. 

4. Mix together flour, eggs, and milk until smooth. Pot half over one chicken pie, and half on the other. Sprinkle remaining cheese over pies. 

5. Cook both pies for 30-40 minutes until toothpick comes out clean.

monster cake

Cauliflower Crust

Ok everyone, this is definitely one of my favorite recipes so far to post on the blog!!!  I was not expecting this cauliflower crust pizza to taste as good as it did.  And it is so dense.  I ate one slice and was full.  My husband ate two and he was full.  He is 6'7 and can eat a whole pizza like no big deal.  But not this pizza.  And he loved it.  My little girl loved it too!  I think I will forever make cauliflower crust.  Hope you all enjoy it as much as we did.

Cauliflower Crust

1 head cauliflower
2 Cups mozzarella cheese, shredded
2 eggs
2 tsp garlic salt
2 tsp olive oil
pizza sauce
toppings of choice

1. Preheat oven to 450

2. Remove leaves and stalk from cauliflower and place in food processor until it looks like rice.
If you do not have a food processor like me, use your cheese grater.  Takes a little longer but its a great arm workout! :)

3. Place rice looking cauliflower in a bowl and add egg, cheese, garlic salt and mix until well combined.

4. Place on greased pan and form into a round circle.

5. Drizzle olive oil on top and place in oven for 15 minutes.

6.  Take out of oven and place pizza sauce and toppings of choice on pizza and place back in oven on HI broil until cheese is nice and bubbly and slightly golden brown.

7. Enjoy!

Peanut Butter Chocolate Chip Cookies with Chocolate Frosting

I (Joni) took a favorite cookie that my family loves and changed a few things to come up with this yummy cookie!!!  These were delicious and everyone who has tried them said best cookies ever!!!  Go make some right now, you wont be disappointed.


Peanut Butter Chocolate Chip Cookies with Chocolate Frosting

1 Cup butter, softened
2 Cups smooth or chunky peanut butter
1 1/2 Cups firmly packed brown sugar
1 Cup granulated sugar
2 Large eggs
1 1/2 Tbsp milk
1 1/2 tsp vanilla
2 1/2 Cups flour
1 1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 Cups milk chocolate chips

Preheat oven to 350
Combined butter, peanut butter and beat until light and fluffy.  I use the kitchen aid.  Add the brown, and white sugars and mix until well combined.  Add the eggs and mix for 1-2 minutes.  Until the mixture is combined.  Add the milk and vanilla, mix.  Add the dry ingredients and mix just briefly.  While there are still large spots of flour, add the chocolate chips and mix until the flour is completely mixed in and all the mixture is well combined.  

When ready to bake, scoop tablespoon sized balls of dough onto a greased cookie sheet.  (I like to scoop about 2 tablespoon sized balls and bake for 14 minutes, but you can do what you like.)  Bake the cookies 10-11 minutes making sure to not over bake.  Take out of oven and leave on cookie sheet for 3-5 minutes to cool.  Then once cooled its time to frost.  I wait about an hour before I do any frosting.  

Chocolate Frosting

1 cube butter
1/3 Cup milk
2 Tbsp cocoa
1 tsp vanilla

Bring to a boil and pour over 1LB powdered sugar.


Toasted coconut toffee s'more bars

The hubs needed a treat last night and shockingly we had nothing!!! So I went into the pantry and tried to come up with something!!! These delicious bars turned out great and the hubs already ate half the pan!!! I say that's a success!!!

Toasted Coconut Toffee S'more Bars

10 graham crackers
5 Tbsp butter
1 half bag mini marshmallows
1 1/2 Cups milk chocolate chips
1 Cup toffee bits
1 14oz can sweetened condensed milk
1 Cup coconut toasted 

1. Preheat oven to 350

2. Smash graham crackers and mix with melted 5 Tbsp butter. Smash into greased 8x8 pan.

3. Bake graham cracker crust for 5 minutes. This helps bind it together.

4. Take out of oven and top with marshmallows, chocolate chips, toffee, and sweetened condensed milk. Place back in oven and bake for 20 minutes. 

5. While that is baking, place coconut in pan and over medium heat, toast coconut. You will need to constantly stir so it does not burn. 

When bars are done, top with toasted coconut and let set before cutting into them!! 


chocolate muffins

We all love the Costco muffins and these are even better!!!  They are full of chocolate goodness.  Perfect for breakfast and dessert!!!  They are really easy to make and its always nice to have a muffin to grab on the go!!!

Chocolate Muffins

1 3/4 Cups flour
1 1/4 Cups brown sugar, packed
2/3 Cup unsweetened cocoa powder
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
2 Cups chocolate chips
3/4 Cup buttermilk
2 large eggs
1/3 Cup vegetable oil
2 tsp vanilla

1. Preheat oven to 350.  Grease muffin pan

2.  In a large mixing bowl mix dry ingredients.

3.  In a large mixing bowl mix wet ingredients.

4.  Mix wet ingredients into dry ingredients, be careful not to over mix.

5.  Add 1/4 cup mix into each muffin tin.

6.  Bake for 18-20 minutes.  Check with toothpick.

7.  I was able to get 16 muffins with this recipe.

painted vases

I (Kara) had nothing on the shelves above our TV. I wanted to do something cheap and easy so I turned to pinterest. I saw all these cute painted glass vases so I thought I would give it a try. IT WAS SO EASY! I went to the thrift store and bought glass vases for $0.99 cents. Then I took some white paint that I already had (it was just a can of touch up paint from Home Depot) and dumped it in the vase and swirled it around until all the surfaces of the vase were covered. I dumped the excess paint back into the paint can and that was it! I don't know how long they took to dry, I put them up immediately. I love how they turned out!



scotch-a-roos

It would not be a Nielson family reunion without the scotch-a-roos.  This is the most favorite family treat that has been in the family forever.  This past weekend was our family reunion and its always great to gather with your loved ones.  And its even better when there is delicious desserts to go along with it. This recipe is always a hit wherever we take it.  Hope you all enjoy it as much as we do!

Scotch-A-Roos

1 Cup sugar
1 Cup peanut butter
1 Cup karo syrup
6-7 Cups rice kris pies
1 pkg chcolate chips.

Bring sugar and syrup to a boil.  Add peanut butter and mix well.  Pour over rice krispies and put on buttered cookie sheet and top with chocolate chips.  Place under broiler for a few seconds.  Spread melted chips.  Let cool, cut into squares.
