Christmas Morning Waffles

Kara made these the other day and said they were so yummy!  Perfect to make when it is snowing outside and you just want to cuddle up and stay in your pajama's all day.  Also perfect for Christmas morning!  They're easy to make and taste so good!

Christmas Morning Waffles

    Cinnamon Syrup:
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup water
  • Cinnamon Apples:
  • 1 tablespoon butter
  • 2-3 large sweet apples, peeled, cored and chopped
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon brown sugar
  • pinch of salt
  • Waffles:
  • 2 cups all-purpose or white whole wheat flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 3/4 cups milk
  • 1/2 cup vegetable, canola or coconut oil
  • 1 teaspoon vanilla extract
  • 2 egg whites
DIRECTIONS
  1. For the syrup, whisk together the sugars, flour and cinnamon in a small saucepan. Whisk in the water and vanilla. Bring the mixture to a low boil and simmer for 5-10 minutes until slightly thickened. Keep warm while preparing the apples and waffles.
  2. For the cinnamon apples, in a 12-inch nonstick skillet, melt the butter. Add the apples, cinnamon, brown sugar and salt. Cook over medium heat, stirring often, until the apples are tender, 5-7 minutes. Keep warm while preparing the waffles.
  3. In a medium bowl, whisk together the flour, white sugar, brown sugar, cinnamon, baking powder, and salt. Pour milk, vegetable oil, and vanilla extract into the flour mixture; stir until just combined. Don't overmix! The mixture should be slightly lumpy.
  4. In a medium glass or metal mixing bowl, beat the egg whites until soft peaks form. If you lift your beater or whisk straight up, the egg whites will form soft mounds rather than sharp peaks. Fold the beaten egg whites into the batter.
  5. Heat a waffle iron (greasing with cooking spray if necessary) and cook the waffles on the hot iron.
  6. Serve with cinnamon apples and cinnamon syrup.

Mint Truffles

This is the easiest holiday treat you will ever make and everyone will wonder how you did it.  I made these for a baby shower and they were a hit.  So easy to make and fun to take a few to all your neighbors to say Merry Christmas.

Mint Truffles

1 pkg fudge covered mint cookies

1/2 block 8 oz cream cheese

1 pkg mint chocolate chips

1/2 Cup white chocolate chips for decoration (optional)

1. Blend cookies in food processor until it looks like dust.  Place in mixing bowl.

2. Fold in softened cream cheese with cookie dust.  Easiest if mixed with hands until it looks like wet dirt.

3. Roll teaspoon sized balls and place on parchment paper.

4. Place in fridge for 1 hour.

5. Place in melted mint chips to coat entire cookie balls.  Place back on parchment paper and place in fridge for 1 hour.  You can be finished at this point or you can melt white chips and drizzle over top.  You could also place sprinkles on top before chocolate layer has hardened.


Birthday cake for a boy

Its been a week of not posting on here.  Sister is here, baking cakes like crazy, and snuggling my new niece has made for some very busy days.  Happy to finally be posting again today.  This cake was for the cutest 12 year old I know.  He loves guns!  So we made a gun cake.  Not the easiest thing to come up with.  With my husband in the military he knows a few things.  So thanks to him he helped out a lot.  If you need a cake email me at twosweettreats@gmail.com




Movie themed cake

The cutest nine year old girl I know had a movie themed birthday this weekend. She was the star of the show and needed a cake to match!  It was so fun to make this cake for her!
